There is nothing quite like coming home to a meal that is already cooked and waiting for you. This slow cooker recipe is a favorite in my house because it requires almost no effort to put together, but it tastes like you spent hours in the kitchen.

The magic happens when the beef stew meat and baby potatoes simmer slowly in a blend of onion soup, au jus, and garlic. If you want a thicker sauce, just stir in a little cornstarch and water right at the end of the cooking cycle.

Ingredients

  • 2 pounds beef stew meat
  • 1 1/2 pounds baby potatoes, yellow or red
  • 2 teaspoons minced garlic
  • 1 packet onion soup mix
  • 1 packet au jus gravy mix
  • 1 tablespoon Italian seasoning
  • 1/2 cup beef broth
  • 6 tablespoons unsalted butter, sliced
  • Salt and black pepper to taste

4Instructions

  1. 1

Add the beef stew meat, baby potatoes, minced garlic, onion soup mix, au jus gravy mix, Italian seasoning, beef broth, and sliced butter into your slow cooker.

  2. 2

Cover the slow cooker and cook on HIGH for 4 to 5 hours or on LOW for 6 to 8 hours.

  3. 3

Once the beef and potatoes are tender, stir the contents gently.

  4. 4

Taste the gravy and add salt or black pepper if you feel it needs a little extra seasoning before serving.

Tips

Store any leftovers in an airtight container in the refrigerator for up to 4 days. If you prefer a thicker gravy, whisk 1 tablespoon of cornstarch with 1 tablespoon of water and stir it into the pot for the last 30 minutes of cooking.
