Easy Chicken Pomodoro
A cozy skillet dinner featuring golden chicken breasts smothered in a bright, garlicky tomato sauce.
easy.enzo81.xyzThere is nothing quite like a simple Italian style dinner to make the house smell amazing. This chicken pomodoro is a favorite in my home because the sauce tastes like it has been simmering all day, even though it comes together very quickly in one pan.
My top tip for this recipe is to grate your own Parmesan cheese instead of using the pre grated kind. It melts so much better into the sauce and creates a lovely, creamy finish that ties all those fresh basil flavors together.
Ingredients
- 2 boneless, skinless chicken breasts, sliced into cutlets
- 1/2 cup all purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 3 tablespoons olive oil
- 3 cloves garlic, minced
- 1/4 cup dry white wine
- 1 can (14 ounces) crushed tomatoes
- 1/2 cup fresh basil leaves, torn
- 1/4 cup grated Parmesan cheese
8Instructions
- 1
Mix the flour, salt, and pepper on a shallow plate.
- 2
Dredge the chicken cutlets in the flour mixture until lightly coated, shaking off any excess.
- 3
Heat the olive oil in a large skillet over medium heat.
- 4
Cook the chicken for about 3 to 4 minutes on each side until golden brown and cooked through, then remove the chicken from the pan.
- 5
Add the garlic to the same pan and cook for one minute until fragrant.
- 6
Pour in the white wine and scrape up any browned bits from the bottom of the pan.
- 7
Stir in the crushed tomatoes and let the sauce simmer for 5 minutes.
- 8
Return the chicken to the skillet, top with the fresh basil and Parmesan, and heat through for another minute before serving.
Tips
This dish is wonderful served over a bed of angel hair pasta or just with a side of crusty bread for dipping. If you have leftovers, store them in an airtight container in the fridge for up to two days and reheat gently on the stovetop.
