Cheesy Beef and Pumpkin Enchilada Skillet
A cozy and flavorful one pan meal that brings all the goodness of enchiladas to your dinner table in no time.
easy.enzo81.xyzThis skillet dinner is a family favorite during the cooler months when you want something hearty and warming. The pumpkin adds a lovely richness that pairs perfectly with the savory ground beef and spices, while the black beans provide a nice texture and extra fiber.
I love making this on busy weeknights because it only uses one pan, which makes cleanup so much easier. If you want a little extra heat, feel free to add a few chopped jalapeños or a dash of hot sauce right into the mix.
Ingredients
- 1 pound ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup canned pumpkin puree
- 1 can black beans, drained and rinsed
- 1 cup red enchilada sauce
- 1 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1 1/2 cups shredded cheddar or Monterey Jack cheese
- 2 tablespoons fresh cilantro, chopped
- Salt and black pepper to taste
7Instructions
- 1
Place a large skillet over medium heat and add the ground beef and onion. Cook until the beef is browned and the onion is soft.
- 2
Stir in the minced garlic and cook for about one minute until fragrant.
- 3
Add the pumpkin puree, black beans, enchilada sauce, chili powder, cumin, and paprika to the skillet.
- 4
Stir everything together well and let it simmer for about five minutes so the flavors can combine.
- 5
Taste the mixture and add salt and pepper as needed.
- 6
Sprinkle the shredded cheese over the top of the skillet and cover with a lid for two minutes or until the cheese is completely melted.
- 7
Remove from the heat and garnish with fresh cilantro before serving.
Tips
Serve this skillet topped with a dollop of sour cream or fresh avocado slices. You can store any leftovers in an airtight container in the fridge for up to three days, and it reheats beautifully in the microwave.
