There is nothing quite like a warm burrito filled with seasoned ground beef, tender beans, and melty cheese. This recipe is a staple in my kitchen because it is so easy to pull together on a busy weeknight. It truly hits the spot when you need something comforting and satisfying.

My favorite thing about these is how well they freeze. I always keep a few wrapped up in the freezer for days when I do not have time to cook from scratch. Just toast them in a hot pan to get that perfect golden crust, and you have a delicious meal ready in minutes.

Ingredients

  • 1 pound ground beef
  • 1 can pinto beans, drained and rinsed
  • 1 cup salsa
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 2 cups shredded cheddar cheese
  • 6 large flour tortillas
  • 1 tablespoon cooking oil

9Instructions

  1. 1

Heat a large skillet over medium heat and brown the ground beef until it is cooked through.

  2. 2

Drain any excess grease from the pan.

  3. 3

Stir in the pinto beans, salsa, chili powder, cumin, and garlic powder.

  4. 4

Cook for about 5 minutes until the flavors are combined and the mixture is hot.

  5. 5

Lay out a tortilla and place a generous spoonful of the beef mixture in the center.

  6. 6

Sprinkle a handful of shredded cheese over the filling.

  7. 7

Fold in the sides of the tortilla and roll it up tightly.

  8. 8

Wipe out your skillet and add a little oil over medium heat.

  9. 9

Place the burritos seam side down in the pan and toast them until they are golden brown on all sides.

Tips

You can wrap individual burritos in foil and store them in the freezer for up to three months. To reheat, just thaw them in the fridge overnight or pop them in the microwave before crisping them up in a hot pan. Serve these with extra salsa, sour cream, or fresh cilantro on the side.
