Fresh Herb and Tomato Galette
This beautiful tomato galette pairs juicy summer tomatoes with a creamy herb filling inside a perfectly flaky crust.
easy.enzo81.xyzThere is something so special about baking with fresh tomatoes during the peak of summer. This galette captures those sunny flavors by layering heirloom slices over a rich, garlicky cream cheese base. It is a wonderful option when you want something that looks impressive but comes together without any fuss.
I love serving this for a slow weekend brunch or a light dinner with a side salad. To keep your crust crisp and your tomatoes perfectly jammy, just remember to salt those tomato slices and pat them dry before assembling. It makes all the difference in the world.
Ingredients
- 1 pie crust (homemade or store bought)
- 2 large heirloom tomatoes, sliced 1/4 inch thick
- 4 ounces cream cheese, softened
- 2 tablespoons fresh basil, chopped
- 1 tablespoon fresh chives, chopped
- 1 clove garlic, minced
- Salt to taste
- Balsamic glaze for drizzling
- Fresh basil leaves for garnish
8Instructions
- 1
Slice your tomatoes and lay them in a single layer on a wire rack or paper towels. Sprinkle them lightly with salt and let them sit for 30 minutes to release excess moisture, then gently pat them dry.
- 2
Preheat your oven to 400 degrees Fahrenheit.
- 3
On a lightly floured surface, roll your pie dough into a circle about 1/8 inch thick and transfer it onto a parchment lined baking sheet.
- 4
In a small bowl, combine the cream cheese, chopped basil, chives, and minced garlic until smooth.
- 5
Spread the herb cream cheese over the center of the dough, leaving a 2 or 3 inch border around the edges.
- 6
Arrange the prepared tomato slices on top of the cream cheese mixture.
- 7
Carefully fold the edges of the dough up and over the outer edge of the tomatoes, leaving the center exposed.
- 8
Bake for 30 to 35 minutes until the crust is golden brown. Let the galette cool for 10 minutes, then drizzle with balsamic glaze and top with fresh basil leaves before serving.
Tips
Store any leftovers in the refrigerator for up to 4 days, or wrap tightly to freeze for up to 3 months. To reheat, warm in a 350 degree oven until the crust crisps up again.
