I have a soft spot for steak tacos, but this version with creamy salsa verde is truly something special. The sauce uses raw tomatillos and fresh avocado to create a bright, tangy flavor that pairs perfectly with the savory, charred steak.

Everything comes together quickly if you start your marinade early. Once the steak is grilled to perfection, you just slice it up and load your tortillas with plenty of salsa and crunchy cabbage. It is a fantastic way to bring fresh Mexican flavors into your own kitchen.

Ingredients

  • 1 pound flank or skirt steak
  • 2 cloves garlic, minced
  • 1 tablespoon lime juice
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 4 large tomatillos, husked and rinsed
  • 1 ripe avocado
  • 1/2 cup fresh cilantro
  • 1/4 cup onion, chopped
  • 1 serrano pepper, seeded if desired
  • 2 cups cabbage, shredded
  • 8 small corn tortillas
  • Salt to taste

6Instructions

  1. 1

Whisk the garlic, lime juice, olive oil, and chili powder in a bowl. Add the steak and let it marinate for at least 30 minutes.

  2. 2

Combine the tomatillos, avocado, cilantro, onion, serrano pepper, and a pinch of salt in a blender. Pulse until the salsa is smooth and creamy.

  3. 3

Toss the shredded cabbage with a squeeze of lime juice and a pinch of salt. Set this aside for a nice crunch.

  4. 4

Heat a grill or heavy skillet over high heat. Cook the steak for about 4 minutes per side or until it reaches your preferred level of doneness.

  5. 5

Let the meat rest for 5 minutes before slicing it against the grain into thin strips.

  6. 6

Warm the tortillas in a dry pan, fill them with steak, top with cabbage, and finish with a generous spoonful of the avocado salsa verde.

Tips

Store any leftover salsa in an airtight container in the fridge for up to two days. If the cabbage loses its crispness, give it a quick toss with a little more fresh lime juice before serving.
