After the chaos of the holidays, sometimes you just need a meal that is simple, filling, and easy to clean up. This chicken and rice dish is a favorite in our house because it uses just one pan and tastes like it took hours to put together.

My best tip for this recipe is to make sure you use a heavy bottomed pot if you have one. It helps the rice cook evenly without sticking to the bottom, and it makes the cleanup process much faster when you are ready to relax for the evening.

Ingredients

  • 2 tablespoons olive oil
  • 1 pound chicken thighs, cut into bite sized pieces
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup white long grain rice
  • 2 cups chicken broth
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • Fresh parsley for garnish

9Instructions

  1. 1

Heat the olive oil in a large pot or deep skillet over medium heat.

  2. 2

Add the chicken pieces and cook until they are browned on all sides.

  3. 3

Stir in the diced onion and cook for about five minutes until it is soft.

  4. 4

Add the garlic and stir for one minute until fragrant.

  5. 5

Pour in the rice and stir it around so it is coated in the oil and juices from the pan.

  6. 6

Pour in the chicken broth and sprinkle in the oregano, salt, and pepper.

  7. 7

Bring the liquid to a gentle boil then turn the heat down to low.

  8. 8

Cover the pot with a tight lid and let it simmer for about twenty minutes or until the rice is tender and the liquid is absorbed.

  9. 9

Remove from the heat and let it sit covered for five minutes before fluffing with a fork and serving with fresh parsley.

Tips

This dish stores well in the fridge for up to three days in an airtight container. If you want to add more color, stir in some frozen peas during the last five minutes of cooking.
