There is something so comforting about the smell of chicken roasting in the oven. It is the perfect meal when you want a home cooked dinner without spending hours standing at the stove.

My favorite thing about this recipe is how the lemon and herbs soak into the meat. If you have extra time, try marinating the chicken in the fridge for an hour before cooking to make it even more flavorful.

Ingredients

  • 1 whole roasting chicken
  • 2 tablespoons olive oil
  • 1 large lemon, halved
  • 4 cloves garlic, smashed
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme leaves
  • 1 teaspoon kosher salt
  • 0.5 teaspoon black pepper

7Instructions

  1. 1

Preheat your oven to 400 degrees Fahrenheit.

  2. 2

Pat the chicken dry with paper towels to ensure the skin gets nice and crispy.

  3. 3

Rub the chicken all over with olive oil, then sprinkle the salt, pepper, rosemary, and thyme evenly over the surface.

  4. 4

Place the lemon halves and smashed garlic cloves inside the cavity of the chicken.

  5. 5

Place the chicken in a roasting pan or a large cast iron skillet.

  6. 6

Roast for about 60 to 75 minutes, or until the juices run clear and a meat thermometer reads 165 degrees Fahrenheit in the thickest part of the thigh.

  7. 7

Let the chicken rest for 10 minutes before carving so the juices stay inside the meat.

Tips

Serve this with some roasted potatoes or a fresh green salad to complete your meal. You can store any leftover chicken in an airtight container in the fridge for up to three days. Use the leftover bones to make a delicious homemade chicken stock later in the week.
