October is my favorite time to get the oven going again. There is nothing quite like the smell of warm spices and roasted vegetables filling the kitchen on a chilly afternoon.

This dish brings together everything I love about fall in one simple pan. Make sure you chop your vegetables into similar sizes so they all finish cooking at the same time.

Ingredients

  • 2 large sweet potatoes, peeled and cubed
  • 1 pound Brussels sprouts, trimmed and halved
  • 2 large carrots, sliced into rounds
  • 1 medium red onion, cut into wedges
  • 2 apples, cored and sliced
  • 3 tablespoons olive oil
  • 1 tablespoon maple syrup
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1/2 cup toasted pecans

7Instructions

  1. 1

Preheat your oven to 400 degrees and line a large baking sheet with parchment paper.

  2. 2

Put the sweet potatoes, Brussels sprouts, carrots, and onion in a large bowl.

  3. 3

Drizzle the vegetables with olive oil and maple syrup, then sprinkle with salt, pepper, and thyme.

  4. 4

Toss everything together until the vegetables are well coated and spread them out in a single layer on the baking sheet.

  5. 5

Roast for 20 minutes, then take the pan out to stir in the apple slices.

  6. 6

Put the pan back in the oven for another 10 to 15 minutes until everything is tender and lightly browned.

  7. 7

Sprinkle the toasted pecans over the top before serving while it is still warm.

Tips

Store any leftovers in an airtight container in the fridge for up to three days. You can reheat them in a hot skillet to keep the edges crispy. This also tastes great with a drizzle of balsamic glaze or a scoop of Greek yogurt on top.
