I love this recipe because it takes the intimidation out of sourdough baking. You do not need a Dutch oven, complicated scoring, or hours of kneading to get professional results. It is truly the perfect project for a beginner.

This bread is a staple in my kitchen because it is so versatile. It works perfectly as a side for dinner, a base for a fancy sandwich, or even as a simple snack topped with fresh herbs and sea salt. Once you try it, you will find yourself making it every week.

Ingredients

  • 1 1/3 cups plus 1 teaspoon water
  • 1/4 cup active sourdough starter
  • 1 1/2 teaspoons fine sea salt
  • 1 tablespoon olive oil
  • 3 cups all purpose flour
  • 4 tablespoons olive oil for the pan and topping
  • Flaky sea salt for sprinkling

8Instructions

  1. 1

In a large bowl, whisk together the water, active sourdough starter, salt, and the one tablespoon of olive oil.

  2. 2

Add the flour and stir until a shaggy, sticky dough forms. Let it rest for one hour.

  3. 3

After the rest, mix the dough by hand for one to two minutes until smooth.

  4. 4

Grease an 8x8 baking dish generously with olive oil. Transfer the dough into the dish and cover it tightly.

  5. 5

Let the dough rest at room temperature for 10 to 12 hours until it has risen and looks bubbly.

  6. 6

Preheat your oven to 425 degrees Fahrenheit. Drizzle the top of the dough with the remaining olive oil and use your fingers to press deep dimples into the surface.

  7. 7

Sprinkle with flaky sea salt and any desired toppings.

  8. 8

Bake for 30 to 40 minutes, or until the top is golden brown and the edges are beautifully crispy.

Tips

Eat this focaccia the day it is made for the best texture. If you have leftovers, store them in an airtight container at room temperature for two days, or wrap the bread tightly and freeze it for up to three months.
