There is something truly special about the taste of old fashioned ice cream. By using fresh eggs and real cream, you get a velvety texture and a deep flavor that you simply cannot find in store bought versions. It is a wonderful way to enjoy a classic dessert made with simple pantry staples.

My best tip for success is to be patient when tempering your eggs. Adding the hot milk very slowly to your egg mixture ensures the base stays perfectly smooth and prevents any scrambling. Once you have mastered this custard base, you can easily customize it with your favorite mix ins like chocolate chips or fresh fruit.

Ingredients

  • 2 cups whole milk
  • 1 cup heavy cream
  • 4 large egg yolks
  • 3/4 cup granulated sugar
  • 1 tablespoon vanilla extract

7Instructions

  1. 1

Pour the milk and cream into a saucepan and heat over medium low heat until it begins to simmer, then remove from the heat.

  2. 2

In a separate mixing bowl, whisk the egg yolks and sugar together until the mixture is light and airy.

  3. 3

Slowly pour the hot milk mixture into the eggs while whisking constantly to temper the eggs.

  4. 4

Return the entire mixture to the saucepan and heat over medium low until it reaches 165 to 170 degrees Fahrenheit, whisking constantly.

  5. 5

Strain the mixture through a fine mesh strainer into a bowl and refrigerate for 2 to 3 hours until completely chilled.

  6. 6

Pour the chilled base into your ice cream maker and churn according to the manufacturer instructions.

  7. 7

Serve immediately for soft serve texture or transfer to a container and freeze until firm.

Tips

Store any leftovers in an airtight container with a piece of plastic wrap pressed directly against the surface of the ice cream to prevent ice crystals from forming. If you want to add mix ins like fruit or chocolate, add them during the final few minutes of the churning process for even distribution.
