There is something so special about a warm bowl of creamy lentils on a busy weeknight. This recipe takes those earthy lentils and gives them a Mediterranean twist with garlic, Italian herbs, and plenty of fresh spinach for color.

You will love how satisfying this dish feels even though it is completely vegetarian. If you want to keep it strictly vegan, just swap the heavy cream for a splash of full fat canned coconut milk or a plant based cooking cream.

Ingredients

  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 small yellow onion, diced
  • 1 cup dried green or brown lentils, rinsed
  • 3 cups vegetable broth
  • 1/2 cup sun dried tomatoes in oil, chopped
  • 1 teaspoon dried Italian herbs
  • 1/2 cup heavy cream
  • 2 cups fresh baby spinach
  • Salt and black pepper to taste
  • Fresh parsley for garnish

7Instructions

  1. 1

Heat the olive oil in a large skillet or pot over medium heat.

  2. 2

Add the onion and cook until softened, then stir in the garlic and cook for another minute.

  3. 3

Add the rinsed lentils, vegetable broth, sun dried tomatoes, and Italian herbs to the pan.

  4. 4

Bring the mixture to a boil, then reduce the heat to low and cover with a lid.

  5. 5

Simmer for about 25 to 30 minutes until the lentils are tender and most of the liquid is absorbed.

  6. 6

Stir in the heavy cream and fresh spinach, cooking just until the spinach wilts down.

  7. 7

Season with salt and pepper to taste, top with parsley, and serve warm.

Tips

These lentils taste even better the next day once the flavors have a chance to settle. Store any leftovers in an airtight container in the fridge for up to four days. You can serve this as a main dish or alongside some crusty bread to soak up the sauce.
