When a busy weeknight hits and I want something warm and filling, this is the chili I always turn to. It is thick, hearty, and full of the kind of flavor that usually takes a full afternoon on the stove to develop.

My secret is to brown the beef well before pressure cooking and to use a mix of beans for the best texture. If you have any leftovers, the flavor actually gets even better after sitting in the fridge overnight.

Ingredients

  • 2 tablespoons olive oil
  • 1 pound ground beef
  • 1 large yellow onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 28 ounces crushed tomatoes
  • 15 ounces kidney beans, drained and rinsed
  • 15 ounces black beans, drained and rinsed
  • 1 cup beef broth
  • Salt and black pepper to taste

7Instructions

  1. 1

Set your Instant Pot to the Sauté function and add the olive oil.

  2. 2

Once the oil is hot, add the ground beef and onion. Cook until the meat is browned and the onion is soft.

  3. 3

Stir in the garlic, chili powder, cumin, and smoked paprika. Cook for one minute until fragrant.

  4. 4

Pour in the crushed tomatoes, kidney beans, black beans, and beef broth. Stir everything together well.

  5. 5

Secure the lid and set the valve to sealing. Cook on High Pressure for 15 minutes.

  6. 6

Allow the pressure to release naturally for 10 minutes before switching to a quick release for any remaining pressure.

  7. 7

Give the chili a good stir, season with salt and pepper, and serve hot.

Tips

Serve this with shredded cheddar cheese, a dollop of sour cream, or some fresh chopped cilantro. You can store leftovers in an airtight container in the fridge for up to four days or freeze them for up to three months.
