There is nothing quite like a quick salmon dinner when you are short on time but still want something delicious. These bite sized pieces cook up in minutes and turn out perfectly golden, making them a regular favorite in my kitchen.

My top tip for this recipe is to pat the salmon very dry with a paper towel before you sear it. This helps the seasoning stick better and ensures you get those beautiful caramelized edges we all love.

Ingredients

  • 1.5 pounds salmon fillets, skin removed and cut into 1 inch cubes
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 3 tablespoons honey
  • 2 tablespoons soy sauce
  • 1 tablespoon lemon juice
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • Chopped green onions for garnish

8Instructions

  1. 1

Pat the salmon cubes dry with paper towels and season them lightly with salt and pepper.

  2. 2

Heat the olive oil in a large skillet over medium high heat.

  3. 3

Add the salmon cubes to the pan in a single layer and cook for about 2 to 3 minutes per side until they are golden brown and cooked through.

  4. 4

Remove the salmon from the pan and set it aside on a plate.

  5. 5

In the same skillet, add the minced garlic and cook for about 30 seconds until fragrant.

  6. 6

Whisk in the honey, soy sauce, and lemon juice. Let the sauce simmer for 2 minutes until it starts to thicken slightly.

  7. 7

Add the salmon back into the pan and toss gently to coat every piece in the glaze.

  8. 8

Remove from the heat and garnish with green onions before serving.

Tips

These bites are wonderful served over steamed white rice or a side of sautéed broccoli. If you have leftovers, store them in an airtight container in the fridge for up to two days and reheat them gently in a pan.
