Perfect Cast Iron Pork Chops
These juicy, golden brown pork chops are the easiest way to get a delicious dinner on the table in under thirty minutes.
easy.enzo81.xyzThere is something so satisfying about a perfectly seared pork chop. I love using my cast iron skillet because it gets hot enough to create that beautiful crust while keeping the inside tender and juicy.
This recipe is a staple in my house for busy weeknights. My biggest tip is to let the meat sit at room temperature for about ten minutes before cooking so it browns evenly every single time.
Ingredients
- 2 thick cut pork chops
- 1 tablespoon olive oil
- 2 tablespoons unsalted butter
- 2 cloves garlic, smashed
- 2 sprigs fresh thyme
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
7Instructions
- 1
Remove the pork chops from the fridge about ten minutes before you start cooking.
- 2
Pat the chops very dry with paper towels and season both sides generously with salt and pepper.
- 3
Heat the olive oil in a cast iron skillet over medium high heat until it begins to shimmer.
- 4
Carefully place the pork chops into the hot skillet and sear for about four minutes without moving them until a deep golden crust forms.
- 5
Flip the chops and add the butter, garlic, and thyme to the pan.
- 6
As the butter melts and foams, spoon it over the pork chops repeatedly for another three to four minutes until they reach an internal temperature of 145 degrees.
- 7
Remove the pan from the heat and let the pork rest on a plate for five minutes before serving.
Tips
Serve these with a side of roasted vegetables or mashed potatoes to soak up the extra butter from the pan. You can store any leftovers in an airtight container in the fridge for up to three days.
