Tilapia is one of my favorite quick dinner options because it keeps well in the freezer and cooks in a flash. This blackened version uses a simple mix of smoky paprika, garlic, and dried herbs to create a beautiful crust that is full of flavor.

My kids really enjoy this recipe because it stays so tender and flaky. It is a fantastic weeknight meal when you need something healthy on the table without spending all evening in the kitchen.

Ingredients

  • 4 tilapia fillets
  • 2 tablespoons melted butter
  • 1 tablespoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon vegetable oil

6Instructions

  1. 1

Pat the tilapia fillets dry with paper towels to ensure the seasoning sticks well.

  2. 2

In a small bowl, mix together the paprika, garlic powder, oregano, cayenne, salt, and pepper.

  3. 3

Brush both sides of each fish fillet with the melted butter.

  4. 4

Press the spice mixture onto both sides of the fillets until they are evenly coated.

  5. 5

Heat the oil in a large skillet over medium high heat.

  6. 6

Place the fish in the hot skillet and cook for about 3 to 4 minutes per side until the fish is opaque and flakes easily with a fork.

Tips

Serve this fish alongside steamed rice and roasted vegetables for a complete meal. You can also flake the cooked fish into warm tortillas with some crunchy cabbage slaw to make quick fish tacos. Keep leftovers in an airtight container in the fridge for up to two days.
