There is something so comforting about a big pan of homemade scalloped potatoes. This recipe relies on thinly sliced potatoes and a decadent cream base flavored with caramelized onions and fresh herbs. It is the perfect side dish for a Sunday roast or a holiday gathering.

Since this version is traditional, it does not call for cheese. However, if you love a cheesy crust, feel free to sprinkle some sharp cheddar or gruyere over the top before you put it in the oven. It is a very flexible dish that always impresses guests.

Ingredients

  • 3 pounds russet or Yukon gold potatoes, thinly sliced
  • 2 tablespoons unsalted butter
  • 1 large yellow onion, thinly sliced
  • 3 cloves garlic, minced
  • 3 tablespoons all purpose flour
  • 2 cups heavy cream
  • 1 cup whole milk
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • Optional: 1 cup shredded gruyere or sharp cheddar cheese

10Instructions

  1. 1

Preheat your oven to 375 degrees Fahrenheit and lightly grease a 9 by 13 inch baking dish.

  2. 2

Melt the butter in a large skillet over medium heat. Add the sliced onions and cook them slowly until they are soft and golden brown.

  3. 3

Add the minced garlic to the onions and cook for one minute until fragrant.

  4. 4

Stir the flour into the onion mixture and cook for another minute to remove the raw flour taste.

  5. 5

Slowly pour in the cream and milk while whisking constantly to prevent lumps. Simmer the sauce until it begins to thicken.

  6. 6

Stir in the thyme, salt, and pepper, then remove the sauce from the heat.

  7. 7

Arrange half of the potato slices in the prepared baking dish. Pour half of the sauce over the potatoes.

  8. 8

Layer the remaining potatoes on top and pour the rest of the sauce over them.

  9. 9

Cover the dish with foil and bake for 45 minutes. Remove the foil and bake for another 20 to 30 minutes, or until the potatoes are tender when pierced with a knife and the top is golden.

  10. 10

Let the dish rest for 10 minutes before serving so the sauce can settle.

Tips

Store any leftovers in an airtight container in the fridge for up to three days. You can reheat individual portions in the microwave or cover the whole dish with foil and warm it in the oven at 350 degrees until heated through.
