Do not let the name fool you, because this dish is pure comfort food. It is a fantastic one pot meal that comes together with very little effort, making it a perfect choice for busy weeknights when you want something satisfying without spending hours in the kitchen.

People love this recipe because it is budget friendly and creates its own delicious, savory sauce as it cooks. It is the kind of meal that brings everyone to the table, and the leftovers are just as good the next day.

Ingredients

  • 3 pounds baby potatoes, halved
  • 14 ounces smoked sausage, sliced
  • 3 cups fresh green beans, cut into 1 inch pieces
  • 1 1/2 cups diced onion
  • 1 packet (1 ounce) onion soup mix
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 cup unsalted butter

6Instructions

  1. 1

Place the halved baby potatoes into the bottom of a 6 to 8 quart slow cooker.

  2. 2

Add the sliced onion, smoked sausage, and green beans on top of the potatoes.

  3. 3

Sprinkle the onion soup mix, Cajun seasoning, garlic powder, and black pepper evenly over the ingredients.

  4. 4

Place the butter on top of the mixture.

  5. 5

Cover and cook on LOW for 6 to 7 hours, or on HIGH for 4 to 5 hours, until the potatoes are tender.

  6. 6

Give everything a gentle stir, taste to see if you need extra salt, and serve while hot.

Tips

Store any leftovers in an airtight container in the refrigerator for up to 3 days. I love serving these potatoes alongside a piece of warm cornbread or crusty dinner rolls to help soak up all that extra buttery sauce.
