Cold Soba Noodles
This refreshing noodle dish is light, quick to make, and perfect for a busy weeknight meal.
easy.enzo81.xyzThese cold soba noodles are one of my favorite things to make when I want something tasty without spending all evening in the kitchen. They are light but satisfying, and you can easily toss in whatever vegetables you have on hand to make them your own.
I love how fast these come together after a long day. If you want a little extra protein, you can add some grilled shrimp or tofu on top, but they are just as wonderful served plain with a nice dipping sauce.
Ingredients
- 8 ounces dried soba noodles
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon toasted sesame oil
- 1 teaspoon honey
- 1 green onion, thinly sliced
- 1 teaspoon toasted sesame seeds
6Instructions
- 1
Bring a large pot of water to a boil.
- 2
Cook the soba noodles according to the package instructions until they are tender.
- 3
Drain the noodles and immediately rinse them under cold running water to stop the cooking and remove excess starch.
- 4
In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, and honey.
- 5
Place the chilled noodles in a bowl and pour the sauce over them.
- 6
Toss well to coat and top with the sliced green onions and sesame seeds before serving.
Tips
Serve these noodles chilled for the best texture. You can store any leftovers in an airtight container in the fridge for up to two days, just give them a quick toss before eating.
