Creamy Buffalo Chicken Pasta
This one skillet pasta brings all the spicy, tangy flavor of Buffalo wings to your dinner table in just 25 minutes.
easy.enzo81.xyzIf you love Buffalo wings but want something more substantial for dinner, this is the recipe for you. It combines tender chicken, hearty pasta, and a creamy, spicy sauce all in one skillet, which makes your evening cleanup so much easier.
Using cream cheese is my secret to a perfectly smooth sauce that stands up to the acidity of the hot sauce and tomatoes. It creates a rich, velvety texture without needing heavy cream. Make sure your cream cheese is at room temperature before you start cooking so it melts right into the sauce without any lumps.
Ingredients
- 1 pound boneless skinless chicken, cubed
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried dill
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon kosher salt
- 2 tablespoons unsalted butter
- 1 can (14.5 ounces) petite diced tomatoes, do not drain
- 2 cups low sodium chicken broth
- 12 ounces penne pasta
- 4 ounces cream cheese, softened
- 1/3 cup Buffalo sauce
- 1 cup shredded mozzarella cheese
- 1/2 cup shredded cheddar cheese
- 2 green onions, sliced
6Instructions
- 1
Place the chicken in a bowl and toss with the garlic powder, onion powder, dill, cayenne, and salt until evenly coated.
- 2
Heat a large skillet over medium heat. Add the butter and let it melt, then add the chicken in a single layer. Cook for about 4 minutes until browned, then remove from the pan if needed or push to the side.
- 3
Pour the undrained diced tomatoes, chicken broth, and uncooked penne into the skillet. Stir well to combine and scrape the bottom of the pan to release any browned bits.
- 4
Cover the skillet and bring the liquid to a simmer. Once simmering, reduce the heat to medium low and cook for 10 to 12 minutes. Stir the pasta every 3 to 4 minutes to ensure it cooks evenly.
- 5
Turn off the heat and stir in the Buffalo sauce and softened cream cheese until the sauce is smooth and creamy.
- 6
Add the mozzarella and cheddar cheeses one handful at a time, stirring until completely melted. Garnish with green onions before serving.
Tips
Serve this with a side of crisp celery sticks or a cool garden salad with ranch dressing to balance the heat. If you have leftovers, store them in an airtight container in the fridge for up to 3 days and reheat gently on the stovetop with a splash of broth.
