If you are looking for a simple fall dessert, this rustic pear tart is the perfect choice. It uses a clever upside down method where the fruit caramelizes on the bottom of the pan while the pastry stays perfectly crisp on top. Once it comes out of the oven, you simply flip it over to reveal a stunning fruit display that looks like it came straight from a French bakery.

I really love the mellow and floral flavor of pears in this recipe. Using firm pears like Anjou or Bosc ensures they hold their shape while baking, providing a lovely texture against the flaky puff pastry. It is a fantastic way to celebrate seasonal fruit while creating a treat that feels truly special for any gathering.

Ingredients

  • 4 to 6 tablespoons honey
  • 6 tablespoons unsalted butter, sliced into 6 even pieces
  • 2 tablespoons light brown sugar
  • 1 1/2 teaspoons ground cinnamon, plus extra for serving
  • 1/2 to 1 teaspoon flaky sea salt or kosher salt
  • 3 to 5 firm Anjou or Bosc pears, sliced 1/8 inch thick
  • 1 sheet frozen puff pastry, thawed
  • 1 large egg beaten with 1 teaspoon water

7Instructions

  1. 1

Preheat your oven to 400 degrees Fahrenheit and line a large rimmed baking sheet with parchment paper.

  2. 2

Drizzle the honey onto the parchment in 6 evenly spaced puddles arranged in 2 rows of 3. Place one pat of butter in the center of each honey puddle.

  3. 3

Sprinkle each butter pat with a little bit of brown sugar, cinnamon, and salt.

  4. 4

Fan the pear slices over the butter pats in 3 long columns. Tuck the slices snugly against each other so the parchment is covered, and ensure they overlap the butter.

  5. 5

Lay the sheet of puff pastry over the arranged pears, trimming it slightly if needed, and tuck the edges under if the pastry is larger than your fruit layout.

  6. 6

Brush the top of the pastry with the egg wash and bake for 20 to 25 minutes until the pastry is golden brown and puffed.

  7. 7

Remove from the oven and let it cool for a few minutes. Carefully place a large cutting board or tray over the tart and flip it over to reveal the caramelized pears.

Tips

Serve this tart warm with a light dusting of extra cinnamon or a scoop of vanilla ice cream. Store any leftovers in an airtight container in the refrigerator and reheat in a warm oven to help keep the pastry crisp.
