There is something truly special about how fresh blackberries transform in the oven. The heat brings out a lovely floral sweetness that makes this simple cobbler a favorite for warm summer evenings.

Using almond flour gives the topping a wonderful, light texture and a subtle nutty flavor that pairs perfectly with the tart berries. Adding a bit of lemon zest and cinnamon really makes the flavors pop.

Ingredients

  • 4 cups fresh blackberries
  • 1 tablespoon lemon zest
  • 1 teaspoon ground cinnamon
  • 2 cups almond flour
  • 1/4 cup maple syrup
  • 1/4 cup Greek yogurt
  • 1 large egg
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

8Instructions

  1. 1

Preheat your oven to 350 degrees Fahrenheit and grease a medium baking dish.

  2. 2

In a mixing bowl, toss the blackberries with the lemon zest and half of the cinnamon.

  3. 3

Spread the berry mixture evenly across the bottom of your prepared baking dish.

  4. 4

In a separate bowl, whisk together the almond flour, the rest of the cinnamon, baking powder, and salt.

  5. 5

Add the maple syrup, Greek yogurt, and egg to the dry ingredients, mixing until a thick dough forms.

  6. 6

Drop spoonfuls of the dough over the blackberries, smoothing the tops slightly with a spatula.

  7. 7

Bake for 30 to 35 minutes until the topping is golden brown and the berry juices are bubbling around the edges.

  8. 8

Let the cobbler cool for at least 10 minutes before serving so the filling can set.

Tips

Serve this warm with a scoop of vanilla bean ice cream or a dollop of fresh whipped cream. If you have leftovers, keep them in the fridge for up to three days and warm them slightly in the oven before eating.
