There is something special about the combination of garlic, lemon, and white wine that makes a simple shrimp pasta feel like a celebration. This dish is one of my absolute favorites because it tastes fancy but comes together in very little time.

My best tip is to use fresh lemon juice instead of the bottled kind. The brightness of the fresh citrus really cuts through the creaminess of the sauce and makes the flavors pop. Keep an eye on your shrimp while they cook so they stay tender and juicy.

Ingredients

  • 8 ounces spaghetti
  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/4 cup dry white wine
  • 1/2 cup heavy cream
  • 1/4 cup fresh lemon juice
  • 1 teaspoon lemon zest
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • Fresh parsley for garnish

8Instructions

  1. 1

Bring a large pot of salted water to a boil and cook the spaghetti according to the package directions until al dente.

  2. 2

While the pasta cooks, heat the olive oil in a large skillet over medium heat.

  3. 3

Season the shrimp with salt and pepper and add them to the skillet. Cook for about 2 minutes per side until they turn pink and opaque, then remove them from the pan.

  4. 4

In the same skillet, add the minced garlic and cook for about 30 seconds until it smells fragrant.

  5. 5

Pour in the white wine to deglaze the pan and scrape up any browned bits from the bottom. Let it simmer for a minute to reduce slightly.

  6. 6

Lower the heat and stir in the heavy cream, lemon juice, and lemon zest. Let the sauce simmer gently for 2 minutes.

  7. 7

Add the Parmesan cheese and stir until the sauce is smooth and creamy.

  8. 8

Toss the cooked spaghetti and the shrimp back into the skillet with the sauce. Mix everything well until the pasta is coated and heated through. Serve immediately with extra parsley on top.

Tips

Store any leftovers in an airtight container in the fridge for up to two days. When reheating, add a tiny splash of water or cream to help the sauce loosen up again.
