Southern Style Tomato Pie
This savory pie features juicy garden tomatoes, melted cheese, and fresh herbs in a perfectly flaky buttery crust.
easy.enzo81.xyzThere is nothing quite like the taste of summer captured in a slice of homemade tomato pie. It is a true southern classic that makes the most of fresh garden produce, and it works just as well as a hearty vegetarian entree as it does as a side dish for your favorite Sunday dinner.
My best piece of advice is to never skip the step of salting your tomatoes. Taking a few extra minutes to pull out that excess water is the secret to getting a firm, delicious slice every single time instead of a soggy one.
Ingredients
- 1 9 inch pie crust, prepared
- 3 to 4 large tomatoes, thinly sliced
- 1/2 cup diced yellow onion
- 1 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- 1/2 cup mayonnaise
- 1/4 cup chopped green onions
- 1/4 cup grated Parmesan cheese
- 1 tablespoon fresh herbs, such as basil or parsley
- Salt and black pepper to taste
8Instructions
- 1
Preheat your oven to 350 degrees Fahrenheit.
- 2
Press your pie crust into a 9 inch pie plate. Line the shell with parchment paper and pie weights, then bake for 25 minutes until lightly browned. Remove the weights and let the crust cool slightly.
- 3
Place your tomato slices on paper towels and sprinkle them with salt. Let them sit for 20 minutes to draw out moisture, then pat them completely dry.
- 4
Scatter the diced yellow onion over the bottom of your prebaked crust.
- 5
Arrange the tomato slices in an even layer over the onions, sprinkle with fresh herbs, and add another layer of tomatoes on top.
- 6
In a mixing bowl, combine the mozzarella, cheddar, mayonnaise, and green onions. Spread this mixture evenly over the top of the tomatoes.
- 7
Sprinkle the Parmesan cheese and a dash of black pepper over the top layer.
- 8
Bake at 350 degrees Fahrenheit for 30 to 40 minutes until the top is golden and bubbling. Let the pie sit for 20 minutes before slicing to help it set.
Tips
Store any leftovers in an airtight container in the refrigerator for up to 4 days. You can serve this warm or at room temperature. If you want a bit of extra flavor, try adding some crispy crumbled bacon between the tomato layers before adding the cheese.
