If you are looking for a dinner that feels special but comes together in a flash, you will love these smashed beef koftas. It is a brilliant way to enjoy all the classic flavors of a Persian kebab without having to worry about skewers or firing up the grill. The secret is the rough, raggedy chunks of meat that get beautifully crispy in the pan.

I really like to serve this with plenty of warm pita bread for scooping. My biggest tip is to grate the onion directly into your meat mixture. It keeps the beef incredibly juicy and packs every bite with savory flavor.

Ingredients

  • 1 pound beef mince
  • 1 onion, grated
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon cayenne pepper
  • 1/2 cup dried cranberries or raisins
  • 1/2 cup walnuts, roughly chopped
  • 1 tablespoon olive oil
  • 1 cup plain unsweetened yogurt
  • 1 large cucumber, grated
  • 1/4 cup fresh mint, chopped
  • Salt to taste
  • 1 tablespoon pomegranate molasses or balsamic glaze
  • Warm pita bread for serving

8Instructions

  1. 1

In a medium bowl, stir together the yogurt, grated cucumber, and half of the fresh mint. Set this mixture aside on the counter to let the flavors meld.

  2. 2

In a separate large bowl, combine the beef mince, grated onion, turmeric, cinnamon, and cayenne pepper. Mix everything together with your hands until well combined.

  3. 3

Heat the olive oil in a large non stick pan over medium high heat.

  4. 4

Drop rough, one inch chunks of the meat mixture into the hot pan. Do not try to make them perfectly round or neat.

  5. 5

Let the meat sear undisturbed for five to seven minutes until the bottom of the chunks are dark golden brown.

  6. 6

Flip the chunks over to brown the other side. Add the cranberries and walnuts to the pan and cook for one more minute, stirring gently until the beef is fully cooked through.

  7. 7

Stir a pinch of salt into your yogurt sauce, then spread it onto a large serving plate.

  8. 8

Top the sauce with the cooked beef mixture, drizzle with pomegranate molasses, sprinkle with the remaining mint, and serve with warm pita bread.

Tips

Store any leftover meat and yogurt sauce in separate airtight containers in the fridge for up to two days. If you find the cucumber sauce gets a bit watery, just give it a quick stir before serving. This meal is best enjoyed while the beef is hot and the sauce is cool.
