Chickpea Cacciatore is one of my favorite go to meals when I want something comforting but meat free. It uses hearty mushrooms and protein packed chickpeas to create a rich, rustic texture that satisfies everyone at the dinner table.

I love serving this over creamy polenta or your favorite pasta shape to soak up all that delicious tomato sauce. If you want to keep the dish vegan, simply ensure your choice of red wine is vegan friendly and serve it as is.

Ingredients

  • 2 tablespoons olive oil
  • 16 ounces cremini mushrooms, sliced
  • 1 yellow onion, diced
  • 3 cloves garlic, minced
  • 1/2 cup dry red wine
  • 28 ounces crushed tomatoes
  • 1 teaspoon dried rosemary
  • 2 cans chickpeas, drained and rinsed
  • 2 tablespoons capers, drained
  • Salt and black pepper to taste
  • Fresh parsley for garnish

7Instructions

  1. 1

Heat the olive oil in a large skillet or pot over medium heat.

  2. 2

Add the sliced mushrooms and cook them until they are browned and tender, which takes about eight minutes.

  3. 3

Stir in the onion and cook until soft, then add the garlic and cook for one minute more.

  4. 4

Pour in the red wine to deglaze the pan and scrape up any flavorful brown bits from the bottom.

  5. 5

Add the crushed tomatoes and rosemary, then let the mixture simmer gently for ten minutes.

  6. 6

Stir in the chickpeas and capers, then cook for another five minutes until heated through.

  7. 7

Season with salt and pepper to your liking and top with a sprinkle of fresh parsley before serving.

Tips

Store any leftovers in an airtight container in the fridge for up to three days. This stew tastes even better the next day once the flavors have had time to meld together. You can serve it over mashed potatoes if you prefer something different than pasta.
