This cobbler is one of my favorite ways to use up sourdough discard when the weather starts to turn chilly. The tart apples bake into a thick, syrupy filling, while the sourdough topping creates a perfect cake like crust that is just sweet enough.

I love serving this warm from the oven with a big scoop of vanilla ice cream. It is such a simple, comforting dessert that feels special enough for company but easy enough for a weeknight treat.

Ingredients

  • 6 cups Granny Smith apples, peeled and sliced
  • 1/2 cup brown sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon apple pie spice
  • 1 cup all purpose flour
  • 1/2 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup sourdough discard
  • 1/4 cup melted butter
  • 1 teaspoon vanilla extract

7Instructions

  1. 1

Preheat your oven to 375 degrees Fahrenheit.

  2. 2

In a large bowl, toss the sliced apples with the brown sugar, lemon juice, and apple pie spice until well coated.

  3. 3

Transfer the apple mixture to a baking dish and bake for 15 minutes to let them soften slightly.

  4. 4

While the apples bake, whisk together the flour, granulated sugar, baking powder, and salt in a medium bowl.

  5. 5

Stir in the sourdough discard, melted butter, and vanilla extract until just combined. Remember to be gentle and avoid overmixing to keep the topping light.

  6. 6

Remove the apples from the oven and drop spoonfuls of the dough over the top of the fruit.

  7. 7

Return the dish to the oven and bake for another 25 to 30 minutes, or until the topping is golden brown and the fruit is bubbling around the edges.

Tips

Store any leftovers in an airtight container in the fridge for up to 5 days. To reheat, warm it in a 350 degree oven for about 15 minutes so the topping stays crisp.
