There is nothing quite like a warm bowl of beef stew on a chilly evening. This recipe uses the slow cooker to make the meat incredibly tender while you relax with your family.

I love serving this with a side of golden cornbread to soak up all that savory broth. It is a hearty meal that brings everyone to the table.

Ingredients

  • 2 pounds beef chuck roast, cut into 1 inch cubes
  • 3 tablespoons all purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 4 cups beef broth
  • 1 tablespoon tomato paste
  • 3 large carrots, peeled and chopped
  • 3 stalks celery, sliced
  • 2 large russet potatoes, peeled and cubed
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 bay leaf

6Instructions

  1. 1

Toss the beef cubes with flour, salt, and pepper in a bowl until coated.

  2. 2

Heat the olive oil in a large skillet over medium high heat and brown the beef on all sides. Transfer the beef to your slow cooker.

  3. 3

Add the carrots, celery, potatoes, onion, garlic, tomato paste, thyme, and bay leaf to the slow cooker.

  4. 4

Pour the beef broth over the ingredients and stir gently to combine.

  5. 5

Cover and cook on low for 7 to 8 hours or on high for 4 hours until the beef is fork tender.

  6. 6

Remove the bay leaf before serving hot with your favorite cornbread.

Tips

Store any leftovers in an airtight container in the fridge for up to 3 days. The flavors actually deepen overnight, making it a great meal to prepare in advance.
