When I am short on time, I always reach for this one pot chicken and couscous recipe. It is incredibly simple to prepare, and it fills the kitchen with such a warm and inviting aroma that everyone will be rushing to the dinner table.

I love this dish because it keeps cleanup to a minimum. Since the chicken and the grains cook together, the couscous absorbs all the delicious juices and spices from the meat. It is a fantastic go to meal for busy evenings.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound chicken breast or thighs, cut into bite sized pieces
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1 cup plain couscous
  • 1 1/2 cups chicken broth
  • Salt and black pepper to taste
  • Fresh parsley for garnish

7Instructions

  1. 1

Heat the olive oil in a large skillet or pot over medium high heat.

  2. 2

Add the chicken pieces and season them with salt, pepper, cumin, paprika, and garlic powder.

  3. 3

Cook the chicken until it is browned on all sides and cooked through.

  4. 4

Stir in the dry couscous and toast it for one minute with the chicken.

  5. 5

Pour in the chicken broth and bring everything to a gentle boil.

  6. 6

Cover the pot with a lid, remove it from the heat, and let it sit for five minutes until the liquid is absorbed.

  7. 7

Fluff the couscous with a fork and sprinkle with fresh parsley before serving.

Tips

Store any leftovers in an airtight container in the fridge for up to three days. You can serve this with a side of steamed vegetables or a crisp green salad to round out the meal.
