There is something special about a dinner that feels cozy and satisfying without needing a huge amount of effort. This recipe is one of my go to meals for those first chilly days when you just want to curl up with a big bowl of comfort food. It hits all the right notes with golden, seasoned chicken and a rich sauce that brings everything together beautifully.

My family loves this served over a big heap of mashed potatoes with some fresh green beans on the side. If you are feeling extra adventurous, you can even swap the chicken for jumbo shrimp which poach perfectly right in the sauce. It is a simple, indulgent dinner that never fails to please a hungry crowd.

Ingredients

  • 1 lb chicken breast
  • 1 tablespoon avocado oil
  • 1 1/2 teaspoons Cajun seasoning
  • 1 tablespoon butter
  • 1 shallot, minced or thinly sliced
  • 1 tablespoon tomato paste
  • 1 teaspoon Cajun seasoning
  • 1 tablespoon flour
  • 3/4 cup heavy cream
  • 1 cup chicken broth

9Instructions

  1. 1

Prepare the chicken by slicing the breasts into thinner cutlets or pounding them until even in thickness.

  2. 2

Season both sides of the chicken with 1 1/2 teaspoons of Cajun seasoning.

  3. 3

Heat the avocado oil in a skillet over medium high heat. Cook the chicken for 3 to 4 minutes per side until golden brown and cooked through. Remove the chicken from the pan and set it aside.

  4. 4

Reduce the heat to medium low and add the butter and shallots to the same pan. Sauté until the shallots are soft and fragrant.

  5. 5

Stir in the tomato paste and the remaining teaspoon of Cajun seasoning. Cook for 3 to 4 minutes until the paste darkens.

  6. 6

Sprinkle the flour over the mixture and stir well. Cook for 2 to 3 minutes to toast the flour.

  7. 7

Slowly pour in the chicken broth while whisking constantly to keep the sauce smooth.

  8. 8

Stir in the heavy cream and let the sauce simmer for 5 to 10 minutes until it thickens to your liking.

  9. 9

Return the cooked chicken to the pan and let it warm through in the sauce before serving.

Tips

Store any leftovers in an airtight container in the fridge for up to three days. When reheating, add a small splash of water or broth to loosen the sauce as it tends to thicken up once cooled. This dish is best served alongside mashed potatoes or roasted vegetables to soak up all the extra gravy.
