This snack cake is a favorite in my kitchen because it is so easy to pull together on a quiet afternoon. The almond flour gives it such a lovely texture, while the honey adds a gentle sweetness that pairs perfectly with a hot cup of tea or coffee.

You do not need a fancy mixer for this recipe. Just grab your favorite mixing bowl, a whisk, and a few pantry staples. It is a foolproof treat that always disappears quickly whenever I serve it to family.

Ingredients

  • 2 large eggs
  • 1/3 cup honey
  • 1/4 cup melted coconut oil or olive oil
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 2 1/4 cups superfine almond flour
  • 1/4 cup arrowroot starch or cornstarch
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon sea salt
  • 1/4 cup sliced almonds for topping

8Instructions

  1. 1

Preheat your oven to 350 degrees Fahrenheit and line a small loaf pan with parchment paper.

  2. 2

In a large bowl, whisk the eggs, honey, oil, vanilla, and almond extract until fully combined.

  3. 3

Add the almond flour, starch, baking soda, and salt to the bowl.

  4. 4

Stir everything together with a spoon until you have a smooth batter.

  5. 5

Pour the batter into your prepared loaf pan and smooth out the top.

  6. 6

Sprinkle the sliced almonds over the top of the batter.

  7. 7

Bake for 30 to 35 minutes or until the top is golden brown and a toothpick comes out clean.

  8. 8

Allow the cake to cool in the pan for at least 20 minutes before slicing and serving.

Tips

Store this cake in an airtight container at room temperature for up to three days. If you want to keep it longer, you can wrap slices tightly and freeze them for up to a month. Serve it slightly warm with a smear of butter or a spoonful of fresh berries.
