Authentic French Mille Feuille
This classic dessert features layers of shatteringly crisp pastry and a rich, velvety vanilla cream that is firm enough to slice beautifully.
easy.enzo81.xyzMaking a real Mille Feuille at home is such a rewarding project. Most recipes you find online use little blobs of cream that squish out when you take a bite, but this version uses a professional custard that is firm enough to hold its shape while remaining incredibly light and silky.
You do not need any fancy tools or rare ingredients to get this right, just a little bit of patience. The secret is baking the pastry under a heavy tray so it stays flat and crunchy, and using a touch of gelatin to make sure the custard sets into those beautiful, clean layers we all love.
Ingredients
- 1 sheet butter puff pastry, roughly 25cm or 10 inches square
- 2 tablespoons icing sugar, plus extra for dusting
- 3 large egg yolks
- 1/3 cup granulated sugar
- 3 tablespoons cornflour
- 1 1/4 cups full fat milk
- 1 vanilla bean, seeds scraped, or 1 teaspoon vanilla bean paste
- 1 teaspoon gelatin powder
- 1 tablespoon cold water
- 3/4 cup heavy cream
12Instructions
- 1
Preheat your oven to 200C or 400F and line a large baking tray with parchment paper.
- 2
Place your puff pastry sheet on the tray and dust it evenly with icing sugar, then place another piece of parchment on top and weigh it down with a second baking tray.
- 3
Bake for 20 to 25 minutes until the pastry is very golden and crisp, then take it out and let it cool completely before cutting it into three equal rectangles.
- 4
To start the custard, whisk the egg yolks, sugar, and cornflour together in a heatproof bowl until the mixture is pale and smooth.
- 5
Pour the milk into a saucepan and add the vanilla bean seeds or paste, then heat it over medium heat until it just begins to simmer.
- 6
Gradually pour the hot milk into the egg mixture while whisking constantly to keep the eggs from scrambling.
- 7
Return the whole mixture to the saucepan and cook over medium heat while whisking until the custard becomes very thick and glossy.
- 8
Mix the gelatin powder with a tablespoon of cold water in a small cup and let it sit for a minute, then stir it into the hot custard until it is completely dissolved.
- 9
Pour the custard into a clean bowl and press a piece of plastic wrap directly onto the surface so it does not grow a skin, then let it cool to room temperature.
- 10
Whip your heavy cream in a separate bowl until it holds stiff peaks and gently fold it into the cooled custard until the filling is light and uniform.
- 11
Lay one pastry rectangle down and spread half of the cream over it, then top with the second piece of pastry and the rest of the cream before finishing with the last pastry layer.
- 12
Place the Mille Feuille in the fridge for at least 6 hours, or overnight, so the filling sets perfectly before you slice it into bars with a sharp serrated knife.
Tips
Use a sharp serrated knife and a gentle sawing motion to cut the bars without crushing the delicate pastry layers. This dessert is best enjoyed on the day it is assembled to ensure the pastry stays perfectly crisp, but you can store leftovers in an airtight container in the fridge.
