This ground beef stir fry is one of my favorite go to meals when I need something fast and hearty. Using ground beef instead of steak keeps the cost down while still giving you that rich flavor everyone loves.

Since you do not need to marinate the meat, you can have this on the table in about half an hour. My best tip is to chop your vegetables while the beef browns so you can get dinner finished even faster.

Ingredients

  • 1 pound ground beef
  • 1 tablespoon vegetable oil
  • 1 head broccoli, cut into florets
  • 2 bell peppers, sliced
  • 2 carrots, thinly sliced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1/3 cup soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon fresh ginger, grated
  • 2 green onions, sliced for garnish

9Instructions

  1. 1

Whisk the soy sauce, brown sugar, rice vinegar, sesame oil, and ginger in a small bowl to make the sauce.

  2. 2

Heat the vegetable oil in a large skillet or wok over medium high heat.

  3. 3

Add the ground beef to the pan and cook until it is browned, breaking it into chunks as it cooks.

  4. 4

Add the broccoli, bell peppers, carrots, and onion to the pan with the beef.

  5. 5

Stir fry the vegetables for about 5 to 7 minutes until they are tender yet still slightly crisp.

  6. 6

Stir in the minced garlic and cook for one minute until fragrant.

  7. 7

Pour the sauce over the beef and vegetables and stir well to coat everything.

  8. 8

Let it simmer for a few minutes until the sauce thickens slightly.

  9. 9

Serve hot over rice and garnish with the sliced green onions.

Tips

This dish is perfect for cleaning out the fridge, so feel free to toss in any extra veggies you have like snap peas or zucchini. Store any leftovers in an airtight container in the fridge for up to three days. It tastes even better the next day once the flavors have had time to meld.
