Perfect Roasted Turkey Every Time
A simple guide to roasting a juicy turkey with crispy skin using a high heat start and a slow finish.
easy.enzo81.xyzRoasting a turkey can feel like a big task, but it is actually quite simple once you know the right timing. My favorite way to get that beautiful golden skin is to start with a very hot oven before turning the heat down to finish cooking. This method keeps the meat moist on the inside while the outside stays perfectly crisp.
Before you get started, make sure to let your bird sit out on the counter for about an hour. This helps it cook much more evenly because you are not putting a freezing cold turkey into a hot oven. It really makes a big difference in how the meat turns out and helps avoid dry spots.
Ingredients
- 1 whole turkey, 12 to 14 pounds and fully thawed
- 1/2 cup unsalted butter, softened
- 2 tablespoons kosher salt
- 1 tablespoon black pepper
- 1 yellow onion, halved
- 1 lemon, halved
- 1 bunch fresh herbs like rosemary or thyme
12Instructions
- 1
Take the turkey out of the fridge one hour before you plan to roast it so it can reach room temperature.
- 2
Move your oven rack to the lower third position and preheat the oven to 450 degrees Fahrenheit.
- 3
Remove the giblets and neck from the cavity, then pat the skin very dry with paper towels.
- 4
Stuff the onion, lemon, and fresh herbs into the cavity for extra flavor.
- 5
Rub the softened butter all over the skin and season everything generously with salt and pepper.
- 6
Place the turkey breast side up on a rack inside a large roasting pan.
- 7
Roast the turkey at 450 degrees Fahrenheit for 45 minutes to get the skin crispy and golden.
- 8
Reduce the oven temperature to 325 degrees Fahrenheit to finish the cooking process.
- 9
Plan for about 8 to 10 minutes of total roasting time per pound, including those first 45 minutes.
- 10
Start checking the internal temperature early using a meat thermometer in the thickest part of the breast and thigh.
- 11
Take the turkey out when it reaches 155 to 160 degrees Fahrenheit, because the heat will continue to rise as it sits.
- 12
Cover the bird loosely with foil and let it rest for at least 30 minutes before carving so the juices stay in the meat.
Tips
If the skin gets too dark before the meat is done, just lay a piece of foil over the top. Always use a meat thermometer instead of checking the color of the juices to be safe. Store any leftovers in an airtight container in the fridge for up to four days.
