Perfect Roasted Red Potatoes
These roasted red potatoes are golden and crispy on the outside while staying perfectly soft and fluffy on the inside.
easy.enzo81.xyzThere is something so comforting about a big tray of roasted potatoes. They were a staple in my kitchen growing up, and I still think they are the best side dish you can make for almost any meal. Everyone loves the contrast between the browned edges and the creamy center.
The secret to getting these just right is using a high oven temperature and giving them enough space on the baking sheet. My best advice is to use garlic powder instead of fresh garlic because it adds that savory flavor without burning in the high heat.
Ingredients
- 2 pounds red potatoes, scrubbed clean
- 3 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon sea salt
- 1/2 teaspoon black pepper
- Fresh parsley for garnish (optional)
7Instructions
- 1
Preheat your oven to 425 degrees Fahrenheit and line a large baking sheet with parchment paper.
- 2
Cut the potatoes into even two inch chunks to ensure they all cook at the same rate.
- 3
Place the potato chunks in a large bowl and toss them with the olive oil, garlic powder, salt, and pepper until they are well coated.
- 4
Spread the potatoes on the baking sheet in a single layer, making sure to place as many as you can with a flat side facing down against the pan.
- 5
Roast for 25 to 30 minutes, or until the bottoms are golden brown and crispy.
- 6
Flip the potatoes and roast for another 10 to 15 minutes until they are fork tender and golden all over.
- 7
Remove from the oven and serve warm, garnished with a little fresh parsley if you like.
Tips
These potatoes are best served immediately while they are hot and crispy. If you have leftovers, store them in an airtight container in the fridge for up to three days and reheat them in a hot oven or air fryer to bring back the crunch.
