Grits are a true staple in my kitchen, especially when they are loaded with plenty of sharp cheddar cheese. They are creamy, warm, and so simple to make once you know a few easy tricks. I love serving these for breakfast with eggs or as a base for a big bowl of saucy shrimp.

The secret to getting them perfectly smooth is all in the whisking. If you take your time and let them simmer low and slow, you will end up with a texture that is absolutely heavenly. Just make sure to use a good quality cheese for the best flavor.

Ingredients

  • 1 cup stone ground grits
  • 4 cups water or chicken broth
  • 4 tablespoons unsalted butter
  • 1 cup sharp cheddar cheese, shredded
  • 1/2 cup heavy cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

7Instructions

  1. 1

Bring your water or broth to a gentle boil in a medium saucepan over medium high heat.

  2. 2

Slowly whisk in the grits and the salt, making sure there are no lumps.

  3. 3

Reduce the heat to low and cover the pot with a lid.

  4. 4

Let the grits simmer for about 20 to 25 minutes, stirring every few minutes so they do not stick to the bottom.

  5. 5

Once the grits are tender and have absorbed the liquid, stir in the butter, heavy cream, and black pepper.

  6. 6

Fold in the shredded cheddar cheese until it is completely melted and the mixture is smooth.

  7. 7

Taste and add a little more salt if you think it needs it, then serve warm.

Tips

If the grits get too thick while sitting, just stir in a splash of warm milk or water to loosen them up. You can store leftovers in the fridge for up to three days, but they are definitely best when fresh and hot.
