This is truly a special occasion dessert for anyone who loves chocolate. It is rich and luxurious, yet surprisingly easy to make because the melted chocolate does all the hard work to firm up the filling. I find that using a mix of cocoa powder and dark chocolate gives it a beautiful, deep flavor that balances perfectly with the tangy cream cheese.

My favorite thing about this recipe is how cleanly it slices. Because it relies on high quality dark chocolate rather than gelatine, it melts in your mouth while holding its shape perfectly on the plate. Make sure you use block cream cheese rather than the tub variety to ensure the best results.

Ingredients

  • 250g Oreo cookies
  • 60g unsalted butter, melted
  • Pinch of salt
  • 360g 70% cocoa dark chocolate, chopped
  • 500g block style cream cheese, softened
  • 1/2 cup caster sugar
  • 2 tablespoons cocoa powder, mixed with 2 tablespoons hot water
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream, divided
  • Optional: Whipped cream and chocolate shavings for topping

11Instructions

  1. 1

Crush the Oreos into fine crumbs using a food processor or a plastic bag and rolling pin.

  2. 2

Mix the cookie crumbs with the melted butter and a pinch of salt until combined.

  3. 3

Press the crumb mixture firmly into the base of a springform pan and chill in the fridge while you prepare the filling.

  4. 4

Melt 260g of the chocolate in a heatproof bowl set over simmering water or in the microwave in short bursts, then set aside to cool slightly.

  5. 5

In a large bowl, beat the softened cream cheese and sugar until smooth and creamy.

  6. 6

Mix in the cocoa powder paste and vanilla extract.

  7. 7

Pour in the melted chocolate and half of the heavy cream, beating until fully combined and velvety.

  8. 8

Pour the filling over the prepared crust, smooth the top, and refrigerate for at least four hours or until set.

  9. 9

To make the ganache, heat the remaining half cup of cream until simmering, then pour it over the remaining 100g of chopped chocolate.

  10. 10

Let it sit for a few minutes, then stir until smooth. Pour this over the chilled cheesecake and chill for another hour.

  11. 11

Finish with piped cream and chocolate shavings if desired.

Tips

Store the cheesecake in the refrigerator until the very moment you are ready to serve. For the cleanest slices, dip your knife in hot water and wipe it dry between each cut.
