One Pot Broccoli Chicken Mac and Cheese
A cozy, creamy dinner that cooks chicken, broccoli, and pasta all in one pot for easy cleanup.
easy.enzo81.xyzThis meal has become a staple in my kitchen when I want something comforting but wholesome. It feels like a total win to get juicy chicken, fresh broccoli, and tender pasta all swimming in a creamy cheese sauce, without having to wash a sink full of pots and pans afterwards.
My biggest tip is to shred your own cheese if you have the time. Store bought pre shredded cheese is often coated in starch to prevent sticking, which can keep your sauce from getting that perfectly smooth, silky texture we all love.
Ingredients
- 1 lb chicken thighs, cut into bite sized pieces
- 1 teaspoon garlic powder
- Salt and black pepper to taste
- 2 tablespoons butter
- 1 small onion, diced
- 2 cloves garlic, minced
- 3 tablespoons all purpose flour
- 2.5 cups chicken stock
- 2.5 cups milk
- 10 oz dried macaroni pasta
- 1 large head of broccoli, cut into florets
- 2 cups shredded cheddar or Colby cheese
- 1/2 cup panko breadcrumbs
- 2 tablespoons melted butter for the topping
- 2 tablespoons grated parmesan cheese
8Instructions
- 1
Preheat your oven to 350 degrees Fahrenheit.
- 2
Melt the butter in a large oven safe pot over medium heat, then add the onion and minced garlic and cook for 2 minutes.
- 3
Add the chicken pieces and sprinkle with garlic powder, salt, and pepper. Cook for about 3 minutes until the outside is sealed.
- 4
Stir in the flour until the chicken and onions are well coated, then slowly pour in the stock and milk while stirring to dissolve the flour.
- 5
Stir in the uncooked macaroni and scatter the raw broccoli florets over the top.
- 6
Cover the pot with a lid and bake in the oven for 20 minutes.
- 7
Remove the pot from the oven, stir in the shredded cheese, and sprinkle the panko, melted butter, and parmesan mixture over the top.
- 8
Place the pot under the oven broiler for 3 minutes until the top is golden and crunchy.
Tips
If you have leftovers, store them in an airtight container in the fridge for up to three days. When reheating, add a small splash of milk to the pasta to loosen the sauce back up.
