There is nothing quite like a big bowl of creamy pasta to make a weeknight feel special. This recipe uses simple ingredients like fresh garlic and real cream to make a sauce that tastes way better than anything from a jar. It is quick enough for a busy Tuesday but feels fancy enough for a date night.

To get the best results, make sure you grate your own cheese rather than using the pre shredded kind. Freshly grated Parmesan melts into the sauce much more smoothly, which gives you that perfect restaurant texture right at home.

Ingredients

  • 1 pound fettuccine pasta
  • 2 large chicken breasts, sliced into strips
  • 2 tablespoons olive oil
  • 1/2 cup unsalted butter
  • 3 cloves garlic, minced
  • 2 cups heavy cream
  • 1.5 cups grated Parmesan cheese
  • Salt and black pepper to taste
  • Fresh parsley, chopped for garnish

9Instructions

  1. 1

Bring a large pot of salted water to a boil and cook the fettuccine according to the package directions until it is just tender.

  2. 2

While the pasta cooks, season the chicken strips generously with salt and pepper.

  3. 3

Heat the olive oil in a large skillet over medium high heat. Add the chicken and cook until it is golden brown and cooked all the way through.

  4. 4

Remove the chicken from the pan and set it aside on a plate.

  5. 5

In the same skillet, turn the heat down to medium and melt the butter. Stir in the minced garlic and cook for about one minute until it smells great.

  6. 6

Pour in the heavy cream and let it simmer gently for about 5 minutes until it starts to thicken slightly.

  7. 7

Turn the heat to low and stir in the grated cheese. Keep whisking until the sauce is smooth and the cheese has completely melted.

  8. 8

Add the cooked pasta and chicken back into the skillet. Toss everything together until the noodles are well coated in the sauce.

  9. 9

Serve it hot with a sprinkle of fresh parsley on top.

Tips

If the sauce seems too thick, you can add a small splash of the pasta cooking water to thin it out. This dish is best served fresh, but you can store leftovers in an airtight container in the fridge for up to two days. Reheat gently on the stove with a tiny bit of milk to keep it creamy.
