If you are looking for a satisfying dinner that feels fancy but is actually quite simple, this recipe is a perfect pick. By using full fat coconut milk and a vibrant blend of sun dried tomatoes, garlic, and herbs, we create a rich sauce that clings beautifully to crispy tofu cubes.

The secret to getting that perfect texture is to press your tofu well and brown it in batches. It takes a little patience, but that golden crunch is what makes the dish special. I love serving this with a side of rice or some warm naan bread to soak up every last drop of the creamy sauce.

Ingredients

  • 14 ounces extra firm tofu
  • 2 tablespoons cornstarch
  • 1/2 teaspoon salt
  • 4 tablespoons canola oil, divided
  • 1/2 cup oil packed sun dried tomatoes, julienned
  • 1 tablespoon tomato paste
  • 4 teaspoons minced garlic
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon Cajun seasoning
  • 1 can (13.5 ounces) full fat coconut milk
  • 2 cups baby spinach
  • Fresh basil for garnish

8Instructions

  1. 1

Wrap the tofu in clean towels and place a heavy object on top for 30 minutes to press out extra moisture.

  2. 2

Cut the pressed tofu into 3/4 inch cubes and toss them in a bowl with the cornstarch and salt.

  3. 3

Heat 2 tablespoons of oil in a large skillet over medium high heat. Add half of the tofu in a single layer and cook until golden brown on all sides, about 6 to 8 minutes. Remove to a plate.

  4. 4

Add another tablespoon of oil to the skillet and repeat the browning process with the remaining tofu.

  5. 5

Lower the heat to medium low and add the final tablespoon of oil. Stir in the sun dried tomatoes, tomato paste, and garlic for 30 seconds.

  6. 6

Add the Italian seasoning, Cajun seasoning, and coconut milk. Simmer the sauce for about 5 minutes until it thickens slightly.

  7. 7

Stir in the baby spinach a handful at a time until it wilts.

  8. 8

Fold the crispy tofu back into the skillet to warm through for 1 minute, then serve immediately garnished with fresh basil.

Tips

Store any leftovers in an airtight container in the fridge for up to three days. Because the sauce is quite rich, I find it pairs best with steamed rice or a crusty piece of bread to help clean your plate.
