If you love stuffed peppers but want a quicker way to get that flavor on the table, this soup is for you. It combines tender ground beef, colorful bell peppers, and rice in a savory tomato base that feels like a big hug in a bowl.

My favorite thing about this recipe is how well the leftovers keep. It actually tastes even better the next day after the flavors have had time to meld together. If you prefer a thicker soup, you can add a little extra rice while it simmers.

Ingredients

  • 1 pound ground beef
  • 1 medium onion, diced
  • 3 bell peppers, chopped
  • 2 cloves garlic, minced
  • 28 ounces crushed tomatoes
  • 4 cups beef broth
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cooked white rice

5Instructions

  1. 1

Brown the ground beef in a large pot over medium heat until it is fully cooked.

  2. 2

Add the onion, bell peppers, and garlic to the pot with the beef and cook until the vegetables soften.

  3. 3

Stir in the crushed tomatoes, beef broth, Italian seasoning, salt, and pepper.

  4. 4

Bring the mixture to a boil, then reduce the heat and simmer for 20 minutes.

  5. 5

Stir in the cooked rice right before serving to keep it from getting too soft.

Tips

Store any leftovers in an airtight container in the fridge for up to four days. If the soup gets too thick after sitting, just stir in a splash of water or extra broth when you reheat it on the stove.
