Chili is one of my favorite comfort foods, and this stovetop version is the one I find myself making again and again. It is packed with flavor, thanks to a mix of hearty beef, bell peppers, and a perfect blend of earthy spices that simmer together until everything is tender and delicious.

I love this recipe because it is straightforward and hits every classic note people look for in a good chili. If you have any leftovers, you are in luck because it tastes even better the next day after the flavors have had more time to meld.

Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 1 green bell pepper, diced
  • 3 cloves garlic, minced
  • 1 pound ground beef
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 28 ounces crushed tomatoes
  • 15 ounces red kidney beans, drained and rinsed
  • 1 cup beef broth
  • Salt and black pepper to taste

9Instructions

  1. 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

  2. 2

Add the onion and bell pepper to the pot and cook until they are soft and translucent.

  3. 3

Add the minced garlic and cook for another minute until fragrant.

  4. 4

Add the ground beef to the pot, breaking it up with a wooden spoon, and cook until browned.

  5. 5

Stir in the chili powder, cumin, and smoked paprika to coat the meat.

  6. 6

Pour in the crushed tomatoes, kidney beans, and beef broth.

  7. 7

Bring the mixture to a gentle simmer, then turn the heat to low.

  8. 8

Cover and let the chili simmer for at least 45 minutes to let the flavors develop.

  9. 9

Season with salt and pepper to taste before serving hot.

Tips

Serve your bowls with shredded cheddar cheese, a dollop of sour cream, and some fresh cilantro. This chili freezes well for up to three months, just make sure to store it in airtight containers.
