This chili is a real comfort food favorite in my house. The sweetness of the potatoes balances out the spice perfectly, and the queso adds a rich texture that makes it feel special.

It is incredibly easy to put together on a busy weeknight. If you have extra time, letting it simmer in the slow cooker makes the potatoes extra tender and brings all those flavors together.

Ingredients

  • 2 large sweet potatoes, peeled and cubed
  • 2 cans black beans, drained and rinsed
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 can diced tomatoes
  • 4 cups vegetable broth
  • 1 cup spicy queso dip
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 2 tablespoons olive oil
  • Salt and pepper to taste

6Instructions

  1. 1

Heat the olive oil in a large pot over medium heat and sauté the onion until it is soft and translucent.

  2. 2

Add the minced garlic, chili powder, and cumin, cooking for about one minute until fragrant.

  3. 3

Stir in the sweet potato cubes, black beans, diced tomatoes, and vegetable broth.

  4. 4

Bring the mixture to a boil, then reduce the heat and let it simmer for about 20 to 25 minutes or until the potatoes are fork tender.

  5. 5

Stir in the spicy queso until it is fully melted and incorporated into the chili.

  6. 6

Season with salt and pepper to taste and serve warm.

Tips

Store any leftovers in an airtight container in the fridge for up to three days. This chili tastes even better the next day once the flavors have had time to settle. Top each bowl with fresh cilantro or extra cheese if you like.
