Fresh and Zesty Steak Salad
A refreshing and satisfying high protein salad that brings together tender steak with creamy avocado and a bright honey lime dressing.
easy.enzo81.xyzThis steak salad has become a favorite in my house because it is filling enough for a main dinner course while still feeling light and fresh. The combination of textures from the crunchy cucumber and sweet corn makes every forkful feel special.
I find that the secret to this recipe is letting the steak rest for a few minutes before slicing it against the grain. This keeps the meat nice and juicy, which balances perfectly with the zesty dressing.
Ingredients
- 1 pound flank or sirloin steak
- 1 tablespoon olive oil
- Salt and black pepper to taste
- 4 cups chopped romaine lettuce
- 1 cup sweet corn kernels
- 1 large cucumber, diced
- 1 ripe avocado, cubed
- 1 small jalapeño, seeded and finely minced
- 3 tablespoons lime juice
- 1 tablespoon honey
- 2 tablespoons olive oil
- 1 tablespoon chopped fresh cilantro
7Instructions
- 1
Season the steak generously with salt and pepper on both sides.
- 2
Heat one tablespoon of olive oil in a skillet over medium high heat.
- 3
Cook the steak for about 4 to 5 minutes per side until it reaches your desired level of doneness.
- 4
Remove the steak from the pan and let it rest on a cutting board for at least 5 minutes before slicing it into thin strips.
- 5
In a small bowl, whisk together the lime juice, honey, two tablespoons of olive oil, and cilantro to create the dressing.
- 6
In a large serving bowl, combine the romaine, corn, cucumber, avocado, and minced jalapeño.
- 7
Top the salad with the sliced steak and drizzle the dressing over the top right before serving.
Tips
Store any leftover dressing in a small jar in the fridge for up to three days. If you plan to make this for lunch later, keep the avocado separate until the last minute so it does not brown.
