If you love chicken parmesan but want something a bit easier to whip up on a weeknight, you have to try these meatballs. Mixing fresh spinach right into the lean ground chicken adds a lovely pop of color and extra nutrition without changing the classic cheesy flavor we all crave.

My favorite thing about this recipe is how the garlic butter sauce keeps everything juicy while it bakes. Serve these over a pile of your favorite pasta or keep things light with some steamed vegetables on the side.

Ingredients

  • 1 pound ground chicken
  • 1 cup fresh baby spinach, finely chopped
  • 1/2 cup breadcrumbs
  • 1/2 cup grated parmesan cheese
  • 1 egg, lightly beaten
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 cup melted butter
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese

8Instructions

  1. 1

Preheat your oven to 400 degrees Fahrenheit and lightly grease a baking dish.

  2. 2

In a large bowl, combine the ground chicken, chopped spinach, breadcrumbs, parmesan cheese, egg, half of the minced garlic, Italian seasoning, and salt.

  3. 3

Mix everything together gently until well combined, then roll the mixture into about 12 to 15 even meatballs.

  4. 4

Place the meatballs into your prepared baking dish.

  5. 5

Whisk the melted butter with the remaining minced garlic and drizzle this mixture over the meatballs.

  6. 6

Bake the meatballs for 15 minutes.

  7. 7

Remove the dish from the oven, spoon the marinara sauce over the top, and sprinkle with the mozzarella cheese.

  8. 8

Bake for another 10 minutes until the cheese is melted and bubbly and the chicken is cooked through.

Tips

These meatballs freeze very well. Just let them cool completely before placing them in an airtight container for up to three months. If you have leftovers, keep them in the fridge for three days and reheat them in the oven or microwave.
