Whole Wheat Zucchini Bread
A moist and nutty quick bread that makes the perfect use of fresh summer zucchini.
easy.enzo81.xyzThis zucchini bread is one of my favorite things to bake when the garden is overflowing. Using whole wheat flour gives it a wonderful nutty flavor and a dense, satisfying crumb that pairs perfectly with a warm cup of coffee or tea.
It is such a simple treat to pull together, and I love having a loaf ready to go for busy mornings or afternoon snacks. If you have any extra zucchini on hand, this is definitely the recipe you want to try first.
Ingredients
- 2 cups whole wheat flour
- 1 teaspoon cinnamon
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup butter, softened
- 3/4 cup brown sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 1/2 cups grated zucchini
9Instructions
- 1
Preheat your oven to 350 degrees Fahrenheit and grease a 9 by 5 inch loaf pan.
- 2
In a medium bowl, whisk together the flour, cinnamon, baking soda, baking powder, and salt.
- 3
In a separate bowl, cream the butter and brown sugar until light and fluffy, then beat in the eggs and vanilla.
- 4
Stir the grated zucchini into the wet ingredients.
- 5
Add the wet mixture to the dry ingredients and stir just until combined, being careful not to overmix.
- 6
Let the batter rest for 15 minutes to allow the flour to hydrate.
- 7
Pour the batter into your prepared loaf pan.
- 8
Bake for 55 to 65 minutes or until a toothpick inserted into the center comes out clean.
- 9
Let the bread cool in the pan for 5 minutes before moving it to a wire rack to cool completely.
Tips
Store your bread in an airtight container at room temperature for up to 4 days or in the fridge for a week. For longer storage, slice the bread and freeze it in a freezer safe bag for up to 3 months. You can also toss in a handful of chocolate chips or chopped walnuts if you want a little extra crunch.
