There is something so comforting about a fresh slice of cornbread straight from the oven. This version uses almond flour to keep things gluten free while maintaining that wonderful, slightly crumbly texture we all love. It has a rich, buttery flavor that makes it hard to stop at just one piece.

The real secret here is letting the cornmeal shine as the main flavor. Because the almond flour is so mild, you get a beautiful corn taste in every single bite. It is a fantastic side dish for soups or a cozy dinner at home.

Ingredients

  • 1 cup yellow cornmeal
  • 1 cup almond flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 2 large eggs
  • 0.5 cup milk
  • 4 tablespoons melted butter
  • 2 tablespoons honey

7Instructions

  1. 1

Preheat your oven to 375 degrees and grease a small baking pan with a little butter or oil.

  2. 2

In a large bowl, whisk together the cornmeal, almond flour, baking powder, and salt.

  3. 3

In a separate bowl, beat the eggs and then stir in the milk, melted butter, and honey.

  4. 4

Pour the wet ingredients into the dry mixture and stir until just combined.

  5. 5

Pour the batter into your prepared pan and smooth the top with a spatula.

  6. 6

Bake for 20 to 25 minutes, or until the top is golden brown and a toothpick comes out clean.

  7. 7

Let it cool for a few minutes before slicing and serving warm.

Tips

Store any leftover cornbread in an airtight container at room temperature for two days or in the fridge for up to five days. You can also toast a slice in the oven before serving to get those crispy edges back. This goes great with a generous pat of salted butter or a drizzle of extra honey.
