These Turkey Taco Bowls are a staple in my house because they take the stress out of busy weeknights. I love that everyone can assemble their own bowl with their favorite toppings, which means no complaining at the dinner table. It is a fantastic way to get a balanced meal on the table in record time.

Since everything is prepared in one pan or bowl, cleanup is very simple. If you have any leftovers, they keep perfectly in the fridge for a quick lunch the next day. I highly recommend adding a squeeze of fresh lime juice right before you eat to make all those bright flavors pop.

Ingredients

  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 1 packet taco seasoning
  • 2 cups cooked white or brown rice
  • 1 can black beans, drained and rinsed
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup sour cream or Greek yogurt
  • 1/4 cup fresh cilantro, chopped

7Instructions

  1. 1

Heat the olive oil in a large skillet over medium heat.

  2. 2

Add the ground turkey to the skillet and cook until it is browned and no longer pink.

  3. 3

Stir in the taco seasoning and a splash of water, then simmer for about 5 minutes until the turkey is flavorful and cooked through.

  4. 4

Divide the cooked rice into four serving bowls.

  5. 5

Top each bowl with a scoop of the cooked turkey and a portion of black beans.

  6. 6

Add the shredded lettuce, diced tomatoes, and cheddar cheese on top.

  7. 7

Finish each bowl with a dollop of sour cream or Greek yogurt and a sprinkle of fresh cilantro.

Tips

Store leftover turkey meat in an airtight container for up to 3 days. You can also prep the veggies in advance to make assembly even faster on busy nights.
