There is something truly special about a traditional turkey that smells like home. This recipe focuses on simple butter and herb flavors that keep the meat juicy while ensuring the skin gets that perfect golden brown finish.

My favorite trick for this roast is to let the turkey come to room temperature before it goes in the oven. It helps the bird cook more evenly so you do not have to worry about dry white meat.

Ingredients

  • 1 whole turkey, about 12 to 14 pounds
  • 1/2 cup unsalted butter, softened
  • 3 tablespoons fresh rosemary, chopped
  • 3 tablespoons fresh thyme, chopped
  • 4 cloves garlic, minced
  • 1 large yellow onion, quartered
  • 1 lemon, halved
  • Salt and black pepper to taste

7Instructions

  1. 1

Preheat your oven to 325 degrees Fahrenheit.

  2. 2

Pat the turkey completely dry with paper towels to ensure crispy skin.

  3. 3

Mix the softened butter, chopped rosemary, thyme, and minced garlic in a small bowl.

  4. 4

Gently loosen the skin over the turkey breast and rub about half of the herb butter underneath. Spread the remaining butter all over the outside of the skin.

  5. 5

Season the entire bird generously with salt and pepper. Stuff the onion quarters and lemon halves into the main cavity.

  6. 6

Place the turkey on a rack in a roasting pan. Roast for about 13 to 15 minutes per pound, or until a meat thermometer inserted into the thickest part of the thigh reads 165 degrees.

  7. 7

Remove the turkey from the oven and let it rest on a carving board for at least 30 minutes before slicing to keep the juices inside.

Tips

Store any leftovers in an airtight container in the fridge for up to three days. If you want to serve it later, gently reheat slices in a pan with a splash of chicken broth so they do not dry out.
