This creamy chicken pasta is one of my favorite go to meals when I want something satisfying but do not have hours to spend in the kitchen. It uses simple pantry staples to create a restaurant quality dinner that feels special enough for guests but is easy enough for a busy weeknight.

My biggest tip is to make sure your chicken is at room temperature before you start cooking. This helps it sear evenly without drying out, ensuring every bite stays tender and juicy throughout the meal.

Ingredients

  • 12 ounces penne or your favorite pasta
  • 1 pound boneless skinless chicken breasts, cut into bite sized pieces
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • Salt and black pepper to taste
  • Fresh parsley for garnish

8Instructions

  1. 1

Bring a large pot of salted water to a boil and cook the pasta according to the package instructions until it is al dente.

  2. 2

While the pasta cooks, heat the olive oil in a large skillet over medium high heat.

  3. 3

Season the chicken pieces with salt, pepper, and Italian seasoning, then add them to the skillet.

  4. 4

Cook the chicken for about 5 to 7 minutes until it is golden brown and cooked through, then remove it from the pan.

  5. 5

In the same skillet, add the minced garlic and cook for about 30 seconds until it smells fragrant.

  6. 6

Pour in the heavy cream and let it simmer gently for 2 minutes, then stir in the Parmesan cheese until the sauce is smooth and thick.

  7. 7

Add the cooked chicken and the drained pasta into the skillet, tossing everything together until the noodles are well coated in the sauce.

  8. 8

Serve warm with an extra sprinkle of fresh parsley on top.

Tips

Store any leftovers in an airtight container in the fridge for up to 3 days. To reheat, add a tiny splash of milk or water to the pan to bring the sauce back to a creamy consistency.
